Scientific Name: Amaranthus dubius.  Common names: 'calaloo'. This Vegetable Amaranth makes a very attractive plant in the garden and good eating, too! Native to the America tropics but is widely cultivated throughout the tropical regions. It is easily grown from seeds. It is a cut-and-come-again leafy green plant that is used like spinach. The fresh leaves are delicious and nutritious stir-fried or steamed. Very high in calcium, magnesium, iron, vitamin C and A, as well as protein. It is an excellent xeriscape plant that is drought tolerant and easily cared in the garden or landscape just needs sunlight and space. There is a purple leaf variety of Amaranth but this is the green leaf variety.
